Breakfast Burritos

With it being so dark and cold out lately, it's a perfect time to stay inside and do some meal prep!

I'm not much of a breakfast person so I like to have foods on-hand that are quick to prepare and take to go. One of my favorite recipes to make is frozen breakfast burritos... with lots of veggies. There are quite a few steps for the preparation, but I multiply the batch and it makes it worth the time and dishes.

 

(Make Ahead) Breakfast Burritos

 

Ingredients:

  • 2 tubes sausage (pork or beef)
  • 8 large eggs
  • 1/2 bag shredded cheese of choice
  • 1 bag frozen skillet potatoes or hash browns
  • 2 green peppers
  • 1 red pepper
  • 1 sweet onion
  • 8 oz sliced mushrooms
  • 12+ medium tortilla shells
  • salt & pepper
  • saran wrap and freezer bags

 

Steps:

1) Brown sausage in skillet. (While it is cooking I dice the peppers and onions)

2) Put sausage aside and in same skillet soften the onions & peppers. Add mushrooms last.

3) When veggies are cooked set them aside and cook potatoes in skillet (you usually have to add some water or oil depending on the bag directions). While potatoes are cooking, whisk eggs, milk and pepper together. 

4) After potatoes are cooked, set them aside and scramble the eggs-again use the same skillet. Sometimes I will first reheat the veggies and pour the egg mix around it and other times I make the burritos with separate ingredients. 

5)  Lay out saran wrap pieces and if tortillas are cold, heat them slightly (do they don't crack).  Add ingredients, fold up, and wrap up. I like to put them in the fridge for a little while to cool down before putting in the freezer. I read that it lessens freezer burn so I'm willing to try the step.

Heating Instructions:

When I am ready to enjoy, I fold a paper towel in half then wrap around the burrito. 
Microwave for 30-45 seconds at a time. Flip burrito over and heat for another 30-45 seconds. Repeat until hot to the touch then remove from microwave immediately and remove paper towel (or it WILL stick to your tortilla) and place on plate for several minutes for it to continue cooking for a few. Use caution because the contents may be very hot, especially the eggs!
